We all need a little variety when it comes to dinner. This adds a healthy dose of protein and iron – plus it’s low-carb.
4 chicken breasts
1 tablespoon olive oil or avocado oil
1 teaspoon paprika
1 teaspoon salt, divided
¼ teaspoon garlic powder
¼ teaspoon onion powder
4 ounces cream cheese, softened
¼ cup grated Parmesan
2 tablespoons mayo
1½ cups chopped fresh (or frozen) spinach
1 teaspoon garlic, minced
½ teaspoon red pepper flakes
Preheat oven to 375 degrees.
Smother olive oil on chicken breasts. Add paprika,½ teaspoon salt, garlic powder, and onion powder to a bowl and combine. Sprinkle evenly over both sides of the chicken.
Next cut a pocket into the side of each chicken breast. Set aside. In another bowl, add cream cheese, Parmesan cheese, mayo, garlic, red pepper. Chop up spinach and add and then add the remaining salt. Stir well. Spoon the spinach mixture into each chicken breast.
Spray cooking spray on a baking sheet and add chicken. Bake, uncovered, for 25 minutes or until chicken is cooked.
